Pates and Terrines
Our Pates are one of the most versatile and so simple to prepare foods for all occasions.
They can be served with toast, fresh crusty bread, with fruit, with salads or just spread on bread to form an excellent sandwich etc. To be eaten morning, noon or night, breakfast, elevenses, lunch, dinner or supper, for a snack, a starter or a main course. For dinner parties serve it as a centrepiece so that you can just help yourselves for that sumptuous and exciting experience.
To add value to a meal, e.g. grilled on top or underneath a steak etc.

Dorset Pate
This famous hand crafted pate is a gourmet coarse premium Pork and Pork Liver Pate with herbs, having a robust flavour. Produced in Dorset for the last two generations . An everlasting, all year round, favourite.
Farmhouse Pate
Traditionally a light smooth Chicken liver pate. This gourmet chicken liver pate meets all the characteristics of a truly grandmaster of artisan pates. Its smoothness, texture and flavour by far surpasses other pates of this type on the market; greatly enjoyed by all ages over the years.
Gourmet Chicken Liver with Wild Mushrooms Pate
A smooth, creamy, indulgent chicken liver pate with the rich flavours of our local New Forest wild mushrooms. Truly a balancing of flavours and textures to perfection. A must to try.
Gourmet Duck Pate
We have made this pate giving it a medium to coarse texture from premium duck meat and duck liver, using a full-bodied red wine, with a sprinkling of apricots, herbs and spices. Its harmony and tension has brought about a truly magnificent fortified flavoursome delivery which, coupled with its texture, provides bliss for the true connoisseur. It is without question a must for the table summer or winter.
New Forest Game Pate
Only available from late October for three months. This medium to coarse wild venison pate,we produce using a very full-bodied red wine and a host of local wild mushrooms. Its very stong flavour has made it a favourite for the winter festive season,ideal with a glass of port, bringing home the robust flavours we associate with Chistmas. A must for every Christmas Hamper.
Porterhouse Pate
Only available from late October for three months. A rustic, course, flavoursome pate – the way pates were meant to be – hung duck, venison and pheasant meat,with duck liver, pork meat, chicken liver, chicken meat and just enough herbs and spices and a fullbodied Porterhouse to give it that little bit of magic. This pate embodies the very essence of charcuterie with its full spectrum of flavours and textures with that added Porterhouse ‘zing’!
